This cacao is washed and unfermented in the traditional Oaxacan manner. Its restrained chocolate, savory nut, full mouthfeel, and gentle pepper character become more balanced when prepared as a drink.

The difference begins before roasting: origin, post-harvest handling, lot selection, and the decision to build for a cup rather than a conventional chocolate bar.

This cacao comes from a sourcing line Chocolate Alchemy has worked with, tasted, and independently analyzed over time.

We are not choosing a generic cacao and adding a story afterward; we are starting with a bean that has years of sourcing notes, roast work, tasting records, and laboratory documentation behind it.

Dark. Grounded. Full-bodied.

Deep and grounded rather than sweet or fruity. A full, almost velvety body with quiet roasted chocolate, savory nuttiness, gentle natural bitterness, and faint peppery warmth.
